4 large eggs 1/2 cup crumbled feta cheese 1/4 cup cherry tomatoes, halved 2 tablespoons ouzo (optional) 1/4 cup fresh basil leaves, torn Salt and pepper, to taste 2 tablespoons olive oil 1/2 teaspoon Greek seasoning blend 1/4 teaspoon ground cumin 1/4 teaspoon ground paprika
Instructions
Whisk eggs with a pinch of salt and pepper in a bowl. Set aside.
In a separate bowl, combine cherry tomatoes, ouzo (if using), basil leaves, Greek seasoning blend, cumin, and paprika. Mix well and set aside.
Heat olive oil in a non stick skillet over medium heat. Pour half of the egg mixture into the skillet, allowing it to cook undisturbed until firm on the bottom but still slightly runny on top. Sprinkle half of the feta cheese evenly over the egg. Carefully flip the omelette and cook for an additional 1 2 minutes or until the cheese is melted.
Repeat steps 3 with the remaining egg mixture and feta cheese.
Divide the Tomato Ouzo Relish between two plates, placing it on one side. Place one omelette on each plate, folding it in half to resemble a taco. Serve immediately.
