Ingredients
6 fresh ears of corn, husks removed
3 tablespoons unsalted butter, melted
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper (optional)
Salt and black pepper, to taste
3 tablespoons crumbled feta cheese
3 tablespoons freshly chopped cilantro
Zest of 1 lime
Instructions
Preheat a grill or grill pan over medium high heat.
In a small bowl, mix together the melted butter, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Set aside.
Place the corn on the preheated grill or grill pan, and cook for 8 10 minutes, turning every few minutes, until slightly charred and tender.
Remove the corn from the heat and brush each ear generously with the spiced butter mixture.
Allow the corn to rest for a minute before adding the crumbled feta cheese, fresh cilantro, and lime zest.
