  • 1/2 tsp hot sauce (optional)
  • 1/4 cup crumbled cotija cheese

Instructions

  2. In a small bowl, combine mayonnaise, lime zest and juice, hot sauce (if using), salt, and pepper to taste. Set aside.
  3. Brush corn with melted butter, then season with smoked paprika, chili powder, salt, and pepper to taste.
  4. Grill corn for 8 10 minutes, turning occasionally, until charred and tender.
  5. Remove corn from grill and immediately spread spicy lime mayo on each ear of corn.
  6. Sprinkle with crumbled cotija cheese and green onions.
  7. Serve hot.
