Ingredients

  • 2 large russet potatoes, scrubbed and cut into 1/2
  • inch thick fries
  • 2 cups vegetable oil, for frying
  • 1 1/2 cups CookJunkie Tex
  • Mex Chili (see recipe below)
  • 2 cups shredded sharp cheddar cheese
  • 1/4 cup thinly sliced green onions
  • 1 jalapeno pepper, thinly sliced (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large pot, heat the vegetable oil to 350°F (175°C). Fry potatoes in batches until golden brown and crispy, about 4 5 minutes per batch. Remove and drain on paper towels.
  3. Transfer fries to a baking sheet and bake for 8 10 minutes or until heated through.
  4. Top the fries with Tex Mex Chili, shredded cheese, green onions, and jalapeno slices (if using).
  5. Place back in the oven and broil for 2 3 minutes or until cheese is melted and bubbly.

Chef’s Insight

To add a smoky twist, include a pinch of smoked paprika in the chili mixture.
