Ingredients
- 1. Large shrimp, peeled and deveined (16 pieces) 2. Wooden skewers (8) 3. BBQ seasoning (1 tbsp) 4. Olive oil (2 tbsp) 5. Mango, ripe (1 large, diced) 6. Lime juice (2 tbsp) 7. Jalapeno pepper, seeded and finely chopped (1) 8. Red onion, finely chopped (ΒΌ cup) 9. Cilantro leaves, chopped (2 tbsp) 10. Mayonnaise (3 tbsp) 11. Greek yogurt (2 tbsp)
Instructions
- Soak skewers in water for 30 minutes.
- Thread shrimp onto soaked skewers, season with BBQ seasoning and drizzle with olive oil.
- Preheat grill to medium high heat.
- Grill shrimp skewers for 2 3 minutes per side until pink and cooked through.
- For the dip, mix together mango, lime juice, jalapeno, red onion, cilantro, mayonnaise, and Greek yogurt. Season with salt and pepper.
- Serve shrimp skewers hot with Spicy Mango Dip on the side.
