Ingredients

  • 4 fresh ears of corn, husked and cleaned
  • 2 tbsp unsalted butter, melted
  • 1 cup mayonnaise
  • 1/2 cup crumbled blue cheese (or substitute feta or cotija)
  • 1/2 cup finely chopped fresh cilantro
  • 1 tsp smoked paprika
  • 1/2 tsp ground cayenne pepper (adjust to taste)
  • Salt and black pepper, to taste
  • Lime wedges for serving

Instructions

  1. Preheat an outdoor grill or grill pan on high heat.
  2. In a small bowl, combine the mayonnaise, blue cheese, cilantro, paprika, cayenne, salt, and pepper. Mix well and set aside.
  3. Brush each ear of corn with melted butter and season with salt and pepper to taste.
  4. Grill the corn for 5 7 minutes, turning frequently, until slightly charred on all sides.
  5. Remove from grill and immediately brush with the blue cheese sauce, evenly coating each ear.
  6. Allow the corn to rest for a minute before cutting off the kernels and serving with lime wedges.
