Keto Indonesian Chicken Satay with Spicy Peanut Sauce

Prepare the chicken satay by combining chicken cubes, coconut aminos, almond flour, coriander, cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper in a large bowl. Mix well to coat the chicken evenly. Cover and refrigerate for 30 minutes.
While the chicken marinates, prepare the Spicy Peanut Sauce by blending peanuts, lime juice, garlic, fresh ginger, sambal oelek, coconut aminos, fish sauce, water, and sea salt in a food processor or high speed blender until smooth. Adjust seasonings as needed. Set aside.
Preheat the grill or broiler to medium high heat. Thread the marinated chicken onto skewers, leaving some space between each piece. Discard any excess marinade.
