  • lean ratio) 1 tsp kosher salt 1/2 tsp freshly ground black pepper 1 tbsp vegetable oil 4 slices Monterey Jack cheese 4 burger buns, split and toasted 8 lime pickles 4 jalapeño slices

Instructions

  1. Divide the ground beef into four equal portions. Form each portion into a loose ball.
  2. Season each ball with kosher salt and freshly ground black pepper.
  3. Heat vegetable oil in a large skillet over medium high heat.
  4. Place each beef ball onto the skillet, flatten it using a burger press or the back of a spatula to create a 1/2 inch thick patty.
  5. Cook the patties for 3 minutes per side, or until desired doneness is reached. Top each patty with a slice of Monterey Jack cheese during the last minute of cooking.
  6. Place cooked patties on the bottom half of burger buns. Add 2 lime pickles and 1 jalapeño slice to each patty, then top with the remaining half of the burger buns.
