Instructions

  1. In a large bowl, combine chicken, bell peppers, and onion. Season with salt and pepper. Set aside.
  2. Preheat a large grill or grill pan over medium high heat. Add oil and cook the chicken mixture until cooked through, about 5 minutes per side. Remove from heat and let rest for a minute.
  3. In a separate bowl, mix together sour cream, cilantro, lime juice, garlic, salt, and pepper to make the zesty lime crema. Set aside.
  4. Warm tortillas on the grill or in the microwave for 10 20 seconds.
  5. Assemble fajitas: Place a generous portion of cooked chicken and vegetables on each tortilla. Top with a dollop of zesty lime crema and a squeeze of lime wedge.
  6. Fold tortillas in half, tuck in sides, and serve immediately!
