  • 1 pound sharp cheddar cheese, grated

  • 4 ounces cream cheese, softened

  • 1 teaspoon ground chipotle powder
  • Salt and black pepper to taste
  • 1 large tortilla chips bag

Instructions

  1. In a medium mixing bowl, combine grated sharp cheddar cheese, canned diced green chiles, cream cheese, sour cream, mayonnaise, chopped fresh cilantro, ground chipotle powder, salt and black pepper to taste.
  2. Mix until all ingredients are fully incorporated and the mixture is smooth.
  3. Place a layer of tortilla chips in the bottom of a large skillet or cast iron pan.
  4. Spread half of the cheese mixture evenly over the layer of chips.
  5. Repeat with another layer of tortilla chips, followed by the remaining cheese mixture.
  6. Top with one more layer of tortilla chips to seal the queso frito.
  7. Preheat your grill or oven to medium high heat (350°F/180°C).
