Ingredients

  • 1. 8 oz boneless, skinless chicken breasts or thighs 2. 1 large bell pepper (red or green) 3. 1 medium white onion 4. 2 tbsp fajita seasoning mix 5. 2 tbsp olive oil 6. 8 small flour tortillas 7. 1 cup shredded cheese (cheddar, Monterey Jack, or a blend) 8. 1 cup sour cream 9. 1 lime, cut into wedges 10. Fresh cilantro leaves, for garnish 11. Hot sauce, optional

Instructions

  1. In a large bowl, combine chicken and fajita seasoning mix. Toss until well coated.
  2. Slice the bell pepper and onion into thin strips.
  3. Heat olive oil in a large skillet over medium high heat. Add chicken and cook for 5 minutes per side or until cooked through. Remove from skillet and let rest.
  4. In the same skillet, add sliced bell pepper and onion. Cook for 4 5 minutes, stirring occasionally, until softened.
  5. Slice cooked chicken into thin strips. Add chicken back to the skillet with the vegetables, mixing well.
  6. Warm tortillas in the microwave or on a grill or stovetop.
  7. To serve, place a scoop of seasoned chicken and vegetables onto each tortilla, top with cheese, sour cream, lime wedges, and cilantro leaves. Add hot sauce if desired.
