Ingredients
- 4 ears of corn, shucked
- 1 cup mayonnaise
- 2 tbsp adobo sauce from canned chipotle peppers in adobo sauce
- 1/2 cup sour cream
- 1 lime, zested and juiced
- 2 tbsp chopped cilantro
- Salt and pepper to taste
- Optional: 1/4 cup crumbled feta cheese
Instructions
- Preheat the grill on high heat.
- Brush the corn with a little oil and season with salt and pepper.
- Grill the corn, turning frequently until charred and tender, about 10 minutes.
- In a medium bowl, mix together the mayonnaise, adobo sauce, sour cream, lime zest, and juice until combined.
- Stir in the chopped cilantro.
- Spread the chipotle mayo over each ear of corn, then sprinkle with additional salt and pepper to taste.
- Optional: Sprinkle feta cheese on top for extra flavor.
- Serve immediately and enjoy the sizzling and smoky flavors!
