Ingredients
- 2 lbs boneless pork shoulder
- 12 corn tortillas
- 2 cups Smoky Chipotle BBQ sauce (recipe below)
- 1 large onion, thinly sliced
- 2 cups shredded cabbage
- 1 avocado, diced
- 1 lime, cut into wedges
- 1 cup fresh cilantro leaves
- Salt and pepper, to taste
Instructions
- Preheat your grill or smoker to medium high heat (350°F). Season the pork shoulder with salt and pepper on all sides.
- Place the pork on the grate and cook for 3 hours, turning every hour and basting with Smoky Chipotle BBQ sauce, until the internal temperature reaches 195°F and the meat is tender enough to shred easily.
- Remove the pork from the grill and let it rest for 10 minutes before shredding.
- Warm the corn tortillas on the grill for 20 seconds per side. Assemble tacos with pulled pork, BBQ sauce, onion, cabbage, avocado, and a squeeze of lime. Top with fresh cilantro leaves.
