  • 1/4 cup brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon cayenne pepper (optional)
  • Salt, to taste Tangy Coleslaw:
  • 4 cups shredded cabbage (green and red)
  • 1 cup mayonnaise
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • Salt and black pepper, to taste Creamy Baked Beans:
  • 2 cans (15 oz each) pork and beans
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 1 teaspoon dry mustard
  • 1 tablespoon vinegar
  • Salt, to taste

Instructions

  1. Prepare the BBQ by soaking wood chips in water for at least 30 minutes. Preheat the grill to medium heat (around 350°F).
  2. Rub pork shoulder with barbecue rub, coating evenly on all sides. Place the meat directly on the grill grates and cook for 3 4 hours or until tender, maintaining a temperature of around 225°F, adding wood chips as needed for smoke.
  3. In the meantime, prepare Memphis Style BBQ Sauce by combining all ingredients in a saucepan over medium heat. Simmer until thickened, then set aside.
  4. Prepare Tangy Coleslaw and Creamy Baked Beans according to the recipes above.
  5. When the pork is tender, remove it from the grill and let it rest for 10 minutes. Slice and serve with toasted bread, BBQ sauce, coleslaw, and baked beans.

Chef’s Insight

The key to this recipe is patience - let the smoker do its magic, allowing the pork to reach an internal temperature of 195°F for maximum tenderness.

Notes

Serve with your favorite local craft beer or a refreshing glass of iced tea to complete the experience.
