Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 links smoked sausage, sliced
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped red onion
  • 1/4 cup fresh cilantro, chopped
  • 2 cups seafood boil seasoning
  • 3 cups water
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 lemon, zested and juiced
  • Salt and pepper, to taste

Instructions

  1. In a large skillet, heat 2 tablespoons of oil over medium high heat. Add sausage slices and cook until browned and slightly crispy, about 4 5 minutes. Remove from the skillet and set aside.
  2. In the same skillet, add shrimp and cook for 3 4 minutes or until pink and cooked through. Remove from the skillet and set aside.
  3. To the skillet, add seafood boil seasoning, water, diced tomatoes, lemon zest, and lemon juice. Bring to a simmer and cook for 5 minutes, allowing the flavors to meld together.
  4. Return sausage and shrimp back into the skillet, along with corn kernels, cherry tomatoes, red onion, and cilantro. Cook for an additional 2 3 minutes, until heated through and fragrant. Season with salt and pepper to taste.
