Ingredients
- 1. 2 lbs beef sirloin, thinly sliced 2. 1 large onion, thinly sliced 3. 2 bell peppers, thinly sliced 4. 1 tbsp oil 5. 2 tsp smoked paprika 6. 1 tsp ground cumin 7. 1 tsp chili powder 8. 1/2 tsp garlic powder 9. Salt and pepper, to taste 10. 8 flour tortillas, warmed 11. 2 limes, cut into wedges 12. Fresh cilantro leaves, for garnish 13. Sour cream, for serving 14. Shredded cheese, for serving 15. Sliced jalapeños, for serving
Instructions
- In a large bowl, mix together the smoked paprika, ground cumin, chili powder, garlic powder, salt, and pepper. Sprinkle this mixture over the thinly sliced beef sirloin and onion, tossing to ensure even coating.
- Heat oil in a large skillet or grill pan over medium high heat. Add the seasoned beef and onion, cooking until the meat is browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the bell peppers, cooking until tender. Return the cooked beef and onions to the skillet with the peppers, stirring to combine.
- Warm the flour tortillas on a grill or in the microwave. Place a portion of the sizzling fajita mixture onto each tortilla, followed by a dollop of sour cream, shredded cheese, and a few slices of jalapeños. Top with fresh cilantro leaves and lime wedges.
- Fold the tortillas in half and serve immediately, enjoying the sizzle and aroma that will transport you to a bustling game day tailgate.
Chef’s Insight
For an extra smoky flavor, add a pinch of smoked paprika to the sour cream.
