Ingredients

  • 12 large chicken wings, separated at the joint
  • 2 cups hot sauce (preferably Frank's RedHot)
  • 1/2 cup unsalted butter
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 cup crumbled blue cheese
  • 1/4 cup sour cream
  • 1 tbsp apple cider vinegar
  • Green onions, thinly sliced, for garnish

Instructions

  1. Preheat the oven to 400°F (205°C). Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, toss the chicken wings with smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and freshly ground black pepper to taste. Place them on the prepared baking sheet and bake for 35 40 minutes, or until cooked through and golden brown.
  3. In a saucepan over medium heat, melt the butter. Add the hot sauce, stirring well to combine. Remove from heat and set aside.
  4. Once the wings are cooked, toss them in the sauce to coat evenly. Transfer the sauced wings back onto the baking sheet and broil for 2 3 minutes or until the sauce is slightly charred and sizzling.
  5. To prepare the blue cheese dip, combine the crumbled blue cheese, sour cream, and apple cider vinegar in a bowl. Season with salt and freshly ground black pepper to taste.
  6. Serve the wings hot with the blue cheese dip on the side, garnished with thinly sliced green onions.

Chef’s Insight
