1. 2 lbs boneless, skinless chicken breasts, cut into 1

purpose flour 3. 2 eggs 4. 2 cups panko breadcrumbs 5. 1/4 cup hot sauce (such as Frank's RedHot) 6. 1/4 cup honey 7. 1/4 cup soy sauce 8. 2 tablespoons butter, melted 9. 8 small corn tortillas 10. 1 avocado, sliced 11. 1 lime, cut into wedges 12. Fresh cilantro leaves for garnish
Instructions
Set up a breading station with three shallow dishes one with flour, another with beaten eggs, and the last with panko breadcrumbs mixed with 1/4 teaspoon of hot sauce.
Dredge chicken pieces in flour, then egg, and finally coat with panko mixture, pressing gently to adhere.
In a medium bowl, combine hot sauce, honey, soy sauce, and melted butter mix well.
Heat oil in a deep frying pan over medium high heat until it reaches 350°F (175°C). Fry chicken pieces for 2 3 minutes per side or until golden brown and cooked through. Remove from the oil and let drain on paper towels.
Once all chicken is fried, add it back to the pan with the prepared sauce and cook for an additional 2 3 minutes until the chicken absorbs some of the sauce.
Serve chicken on warm corn tortillas, topped with avocado slices, lime wedges, and fresh cilantro leaves.
