Ingredients

  • 2 lbs pork shoulder, cut into 1
  • inch cubes 1 cup orange juice 1/2 cup lime juice 1/4 cup olive oil 3 tbsp taco seasoning Salt and pepper, to taste 8 small corn tortillas 1 recipe Smoky Mango Salsa (see below)

Instructions

  1. In a large bowl, combine pork cubes, orange juice, lime juice, olive oil, taco seasoning, salt, and pepper. Mix well and let marinate for at least 30 minutes.
  2. Preheat a grill or grill pan to medium high heat.
  3. Thread the marinated pork onto metal skewers, leaving space between each piece.
  4. Grill the skewers for 15 20 minutes, turning frequently and basting with the marinade until the pork is tender and slightly charred. Remove from grill and let rest for 5 minutes.
  5. Warm corn tortillas on the grill for about 30 seconds per side or in a dry pan over medium heat.
  6. To assemble, place a portion of carnitas onto each tortilla, top with Smoky Mango Salsa, and fold in half to create a taco shape.
