  • 1 cup evaporated milk
  • 2 tbsp butter
  • 2 tbsp all
  • purpose flour
  • Salt and pepper to taste

Instructions

  1. Prepare the marinade by combining lime juice, vegetable oil, cumin, paprika, garlic powder, onion powder, chili powder, salt, and pepper in a large resealable plastic bag. Add sliced beef and massage it well to coat evenly. Refrigerate for at least 30 minutes or up to overnight.
  2. Slice the bell peppers and onions into thin strips. Set aside.
  3. In a saucepan, melt butter over medium heat. Stir in flour until smooth, then gradually add evaporated milk and stir continuously until the sauce thickens. Reduce heat to low and add shredded Monterey Jack cheese, diced green chilies, salt, and pepper. Stir until fully incorporated. Keep warm.
  4. Heat a large skillet or griddle over medium high heat. Remove beef from marinade, discarding any excess liquid. Sauté the beef until cooked through, about 3 4 minutes per side. Transfer to a heated serving platter and keep warm.
  5. In another skillet, heat olive oil over medium heat. Add bell peppers and onions, sautéing for 3 4 minutes or until tender crisp. Season with salt and pepper to taste.
  6. To serve, place a portion of sautéed peppers and onions onto each tortilla, followed by slices of cooked beef, then generously drizzle the cheese sauce. Fold the tortilla in half and garnish with additional cheese, if desired. Enjoy!
