Ingredients
- 8 small corn tortillas
- 1 lb ground beef or chicken
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 2 cups onion rings (use recipe below)
- 1 avocado, diced
- 1 tomato, diced
- 1 jalapeno, finely chopped (optional)
- 1/4 cup cilantro, chopped
- 1 lime, cut into wedges
- 1/2 cup sour cream
Instructions
- Heat a large skillet over medium heat. Add ground meat and cook until browned, breaking up any clumps. Drain excess fat if necessary.
- Add taco seasoning to the skillet, mix well, and cook for 2 3 minutes or according to package instructions. Set aside. Onion Rings:
- Prepare onion rings by thinly slicing onions into rings, separating the layers. Dip in batter made with 1 cup flour, 1 cup ice cold water, and a pinch of salt until well coated. Fry in hot oil (350°F) for 2 3 minutes or until golden brown. Drain on paper towels. Crispy Carnival Tacos:
- Warm corn tortillas on a dry skillet or in the microwave for 20 seconds.
- To assemble, layer taco meat, onion rings, avocado salsa, and lime crema on each warm tortilla. Garnish with cilantro and lime wedges.
