2 fresh corn on the cobs, husked and silks removed
1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup Cotija cheese, crumbled
1/4 teaspoon smoked paprika
1/4 teaspoon ground cumin
1/2 teaspoon ground black pepper
1/4 teaspoon salt
1/2 teaspoon chili powder
1 lime, cut into wedges
1 tablespoon chopped fresh cilantro
2 tablespoons butter, melted
Instructions
Preheat an outdoor grill or grill pan to medium high heat.
In a small bowl, mix together mayonnaise, sour cream, Cotija cheese, smoked paprika, ground cumin, black pepper, and chili powder until well combined. Set aside.
Brush the corn with melted butter and season with salt. Grill the corn, turning occasionally, for 8 10 minutes or until tender and slightly charred.
Remove corn from grill and immediately spread the prepared sauce evenly over each cob.
Squeeze lime wedges over the sauced corn and sprinkle with chopped cilantro. Serve hot!
