Ingredients
- 6 ears of fresh corn, husked and cleaned
- 2 tablespoons vegetable oil
- 1 teaspoon chili flakes
- Salt, to taste
- Black pepper, to taste
- 3 tablespoons mayonnaise
- 3 tablespoons sour cream
- 1 tablespoon lime juice
- 1 cup shredded Cotija cheese
- 2 tablespoons chopped cilantro
- 1 lime, cut into wedges
Instructions
- Preheat a grill to medium high heat (350°F).
- In a small bowl, mix together the mayonnaise, sour cream, and lime juice set aside.
- Brush the corn with vegetable oil, then sprinkle with chili flakes, salt, and black pepper.
- Place the corn on the preheated grill and cook for 15 20 minutes, turning occasionally until lightly charred,
- Remove the corn from the grill and let it cool slightly.
- Spread the prepared dressing evenly over each ear of corn. Sprinkle with Cotija cheese and chopped cilantro.
- Serve immediately with lime wedges for a burst of citrus flavor.
