1/2 cup Southern BBQ spice rub
3 tbsp unsalted butter, softened
4 large hamburger buns, split and toasted
1 cup coleslaw
1/2 cup pickles, sliced
6 slices American cheese
Instructions
Coat each chicken thigh with the BBQ spice rub, pressing gently to adhere. Let sit for at least 30 minutes.
Preheat a grill or grill pan over medium heat.
Grill the chicken thighs, skin side down first, until cooked through and charred, about 7 8 minutes per side.
In the last minute of cooking, place a slice of butter on each chicken thigh and cover with a lid to melt.
Toast the buns on the grill for about 1 minute per side.
Assemble sandwiches: bottom half of bun, coleslaw, pickles, melted chicken thigh, American cheese, and top half of bun.
