Ingredients
- 4 large ears of fresh corn, husked and cleaned
- 8 slices of thick

- 1/2 cup crumbled blue cheese (optional)
- 1/2 cup sour cream
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 tablespoon freshly chopped cilantro (optional)
- Zest of 1 lime (optional)
- 2 tablespoons melted butter
Instructions
- In a large skillet, cook the bacon over medium heat until crispy. Remove from skillet and let cool, then crumble into pieces. Set aside.
