Instructions

  1. Preheat your grill or oven to 350°F.
  2. Rub the pork shoulder generously with Memphis BBQ rub.
  3. Place the seasoned pork on a foil lined tray and bake for 45 minutes.
  4. In a bowl, mix apple cider vinegar and orange juice. After 45 minutes, baste the pork with this mixture and continue baking until tender and easily pulled apart, approximately 2 more hours.
  5. Once cooked, shred the pork and keep warm.
  6. Grill or pan sear the corn tortillas until slightly crispy, about 30 seconds per side.
  7. Assemble your tacos by adding shredded lettuce, avocado slices, pico de gallo, pulled pork, and a squeeze of lime. Add hot sauce if desired.
