Ingredients
- 1 pound lean ground beef
- 2 tablespoons taco seasoning mix
- 8 small corn tortillas
- 1 cup shredded cheese (Monterey Jack or Cheddar)
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- 1/4 cup sliced green onions
- 1 lime, cut into wedges
- 1 avocado, sliced
Instructions
- In a large skillet, cook ground beef over medium heat until browned and crumbly. Drain any excess grease.
- Stir in taco seasoning mix and cook according to package directions for ground beef. Set aside.
- Warm corn tortillas on a grill or in a dry skillet for about 15 seconds per side.
- To assemble the tacos, spoon cooked beef mixture onto each warm tortilla. Top with cheese, sour cream, cilantro, green onions, and a squeeze of lime.
- Finish with a few avocado slices and serve immediately.
