Sizzling Game Day Chili Cheeseburger Stuffed Peppers

Ingredients

• 6 large bell peppers (assorted colors) 2 lbs ground beef (80% lean) 1 cup chili con carne mix 1 tsp salt, divided 1/2 tsp black pepper, divided 1 tsp garlic powder 1/2 cup onion, finely chopped 6 slices of cheddar cheese 6 hamburger buns, toasted

Instructions

1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Carefully cut off the tops of the bell peppers and remove seeds and membranes. Stand peppers upright on prepared baking sheet.
3. In a large skillet, cook ground beef over medium heat until browned, breaking up with a spoon. Drain excess fat.
4. Stir in chili con carne mix, 1/2 tsp salt, 1/4 tsp black pepper, and garlic powder. Cook for 5 minutes or until thoroughly heated. Remove from heat.
5. Fill each pepper with the meat mixture, pressing down gently to pack it in. Top each filled pepper with a slice of cheddar cheese.
6. Place stuffed peppers on baking sheet in oven and bake for 20 25 minutes or until peppers are tender.
7. Serve on toasted hamburger buns, open faced, with extra chili con carne mix on the side if desired.
