Ingredients

  • 1 lb beef short ribs, cut into 1

  • 2 cups cabbage kimchi
  • 2 large onions, thinly sliced
  • 4 green onions, chopped
  • 4 cloves garlic, minced
  • 2 tbsp gochujang (Korean chili paste)
  • 1/4 cup soy sauce
  • 2 tbsp sugar
  • 2 tbsp rice wine vinegar
  • 1 tbsp sesame oil
  • 1 tsp ground black pepper
  • 1/2 tsp Korean red pepper flakes
  • 8 metal skewers

Instructions

  1. In a large bowl, mix together gochujang, soy sauce, sugar, rice wine vinegar, sesame oil, black pepper, and Korean red pepper flakes. Set aside.
  2. Marinate beef short ribs in the sauce for at least 30 minutes, or up to overnight for maximum flavor.
  3. Preheat a grill or grill pan over medium high heat.
  4. Thread marinated beef onto metal skewers, along with sliced onions and green onions.
  5. Grill the skewers for 3 4 minutes per side, until meat is cooked through and slightly charred.
  6. Serve the grilled skewers alongside cabbage kimchi, and enjoy the sizzling, smoky flavors of this Korean BBQ feast!
