Ingredients
2 large chicken breasts, cut into 1
inch cubes
2 pineapples, peeled, cored, and cut into 1
inch chunks
Wooden or metal skewers
For the marinade:
1/4 cup soy sauce
1/4 cup lime juice
3 tablespoons honey
2 tablespoons minced fresh ginger
2 cloves garlic, minced
1 teaspoon red pepper flakes
1/4 teaspoon ground cinnamon
Instructions
In a large mixing bowl, combine all marinade ingredients and whisk until well combined.
Add chicken cubes to the marinade, making sure they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
While the chicken is marinating, prepare the spicy mango dipping sauce by blending together all ingredients in a food processor until smooth. Refrigerate until ready to serve.
Preheat your grill to medium high heat. Thread chicken and pineapple chunks onto skewers, alternating between the two.
Grill skewers for 6 8 minutes per side or until chicken is cooked through and pineapple is slightly charred. Remove from heat and let rest for a few minutes before serving.
