1 lb Smoked Sausage, sliced into 1/4
inch thick rounds
1 cup Sweet Pepper Relish (recipe below)
1/2 cup Butter, softened
1/4 cup Fresh Cilantro, chopped (optional) Sweet Pepper Relish:
1/2 cup Red Bell Peppers, finely diced
1/2 cup Green Bell Peppers, finely diced
1/2 cup Yellow Bell Peppers, finely diced
1/4 cup White Vinegar
1/4 cup Granulated Sugar
1 tsp Salt
1/2 tsp Black Pepper
1/2 tsp Red Pepper Flakes (optional)
Instructions
Preheat the grill to medium heat, around 350°F (175°C).
In a medium bowl, combine all Sweet Pepper Relish ingredients and mix well. Set aside.
Spread softened butter on both cut sides of each mini roll. Place them on the preheated grill, buttered side down, for 2 3 minutes or until toasted.
Remove rolls from the grill and assemble sliders by adding a slice of smoked sausage to the bottom half of each roll, followed by a spoonful of Sweet Pepper Relish. Top with the remaining half of the roll.
Grill assembled sliders for another 3 4 minutes or until heated through and sausage is warmed.
If desired, garnish with chopped cilantro before serving.
