Prepare the shrimp by rinsing and patting them dry with paper towels. Set aside.
In a shallow dish, mix flour, Creole seasoning, and cayenne pepper (if using) to taste.
In another shallow dish, pour buttermilk.
Dredge each shrimp in the flour mixture, then coat with buttermilk. Let excess drip off.
Place a few coated shrimp on a plate and place it in the freezer for 10 minutes to help the breading adhere better.
In a deep frying pan or pot, heat about 2 inches of vegetable oil to 350°F (175°C).
Carefully lower a few shrimp at a time into the hot oil using tongs or a slotted spoon. Fry until golden brown and cooked through, about 4 5 minutes. Remove from oil with a slotted spoon and place on paper towels to drain.
