2 large ears fresh sweet corn, husked and cleaned 2 tablespoons unsalted butter 1/2 cup mayonnaise 1/4 teaspoon ground cayenne pepper 1/2 teaspoon kosher salt 1/4 teaspoon ground black pepper 1/3 cup crumbled cotija cheese 2 tablespoons chopped fresh cilantro 1 lime, cut into wedges
Instructions
Preheat a grill or grill pan to medium high heat.
In a small bowl, combine mayonnaise, cayenne pepper, salt, and black pepper mix well and set aside.
Brush corn ears with melted butter and season with additional kosher salt to taste.
Place corn on the grill and cook for 10 12 minutes, turning every few minutes until evenly charred, with some kernels slightly blackened. Remove from heat and let cool for a couple of minutes.
Carefully spread a generous layer of the seasoned mayonnaise mixture over each ear of corn, covering all sides.
Sprinkle cotija cheese generously on top of the mayo, then sprinkle with cilantro leaves.
Squeeze lime wedges over each ear of corn and serve immediately.
