Ingredients
1 lb boneless, skinless chicken breast, cut into 1
inch cubes
1/2 cup all
purpose flour
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper, to taste
2 cups vegetable oil, for frying
8 wooden skewers
1 large bell pepper, cut into 1
inch pieces
1 large red onion, cut into 1
inch pieces
1/4 cup barbecue sauce
2 tablespoons Sriracha sauce
1 tablespoon apple cider vinegar
1 tablespoon brown sugar
1 teaspoon Worcestershire sauce
Fresh cilantro leaves, for garnish
Instructions
In a shallow dish, whisk together the flour, paprika, garlic powder, onion powder, salt, and pepper. Dredge the chicken cubes in the seasoned flour mixture, shaking off excess flour.
Heat vegetable oil in a deep frying pan to 350Β°F. Carefully lower a few pieces of floured chicken into the hot oil and fry until golden brown, about 3 4 minutes. Remove with a slotted spoon and place on a paper towel lined plate to drain. Repeat with remaining chicken.
Thread the fried chicken, bell pepper, and red onion pieces onto wooden skewers.
In a small saucepan, combine barbecue sauce, Sriracha sauce, apple cider vinegar, brown sugar, and Worcestershire sauce. Cook over medium heat until the mixture thickens slightly.
Brush the sauce generously on both sides of the skewered chicken and vegetables. Place the skewers on a preheated grill or broiler rack and cook for 3 4 minutes per side, basting frequently with more sauce to achieve a sticky glaze.
Remove from heat and let rest for a minute before serving. Garnish with fresh cilantro leaves.
Chefβs Insight
Use a kitchen towel to safely handle the hot oil when frying the chicken. - Don't overcrowd the frying pan, as this will lower the oil temperature and result in greasy chicken.
Notes
Don't forget to preheat your grill or broiler before cooking the skewers.
