Ingredients

  • 6 beef patties (80% lean)
  • 6 hamburger buns
  • 1 large white onion, thinly sliced
  • 2 cups wood chips (hickory or applewood)
  • 2 tablespoons vegetable oil
  • 1 cup Memphis BBQ Sauce (recipe below)
  • 6 slices cheddar cheese
  • 1 cup coleslaw
  • Salt and pepper, to taste Memphis BBQ Sauce:
  • 1 cup ketchup
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1/4 cup molasses
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste

Instructions

  1. Soak wood chips in water for at least 30 minutes.
  2. Preheat grill to medium high heat (about 400Β°F).
  3. In a small bowl, combine all BBQ sauce ingredients. Set aside.
  4. Season both sides of beef patties with salt and pepper.
  5. Place soaked wood chips in a smoker box or directly on grill grates, close the lid, and allow the grill to heat up for 5 minutes.
  6. Place patties on the grill and cook for 3 4 minutes per side or until desired doneness is reached. During the last minute of cooking, add a few more wood chips to create smoke and aroma.
  7. While the burgers are cooking, brush both sides of the patties with Memphis BBQ Sauce and place sliced onion on top. Continue cooking until burgers are cooked through.
  8. In the last minute of cooking, add a slice of cheddar cheese to each patty and let it melt.
  9. Brush the inside of hamburger buns with vegetable oil and grill them briefly to achieve a nice, crusty texture.
  10. Assemble the burgers by placing patties on the bottom bun, adding coleslaw and a generous dollop of BBQ sauce on top. Finish with the top bun.
