Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 cups water
- 4 teaspoons Cajun seasoning blend (store
- bought or homemade)
- 1 cup fresh corn kernels
- 1 small red onion, thinly sliced
- 1 small yellow squash, sliced into thin half

- 2 garlic cloves, minced
- 1 tablespoon olive oil
- Lemon wedges, for serving
Instructions
- In a large pot, combine the water and Cajun seasoning blend. Bring to a boil.
- Add the shrimp, corn, onion, squash, and garlic to the boiling water. Cook for 3 4 minutes or until the shrimp is pink and cooked through.
- Drain the seafood and vegetables, reserving some of the spicy liquid.
- Heat a large cast iron skillet over high heat. Add the reserved spicy liquid, along with additional Cajun seasoning if needed, to create a flavorful base.
- Once the skillet is smoking hot, add the cooked seafood and vegetables. Stir fry for 2 3 minutes, allowing the flavors to meld and intensify.
- Remove from heat, garnish with lemon wedges, and serve immediately.
