Ingredients

  • 1 whole chicken, cut into 8 pieces (preferably organic, free
  • range) 2 cups hickory wood chips 1 cup BBQ sauce (preferably Memphis
  • style) 1/4 cup apple cider vinegar 1/4 cup yellow mustard 1/4 cup brown sugar 1 tablespoon paprika 1 teaspoon ground black pepper 1 teaspoon salt 1 teaspoon onion powder 1 teaspoon garlic powder 1 teaspoon cayenne pepper (optional)

Instructions

  1. Soak wood chips in water for at least 30 minutes to prevent burning.

Cook with the lid closed for 20 25 minutes, turning occasionally and basting with the BBQ sauce mixture every 5 minutes until cooked through.
