  • in pork shoulder chops (about 2 inches thick) 2. 1 cup Memphis BBQ dry rub 3. 1 cup applewood chips, soaked in water for 30 minutes 4. 1 cup store
  • bought Memphis BBQ sauce 5. 4 hamburger buns, split and toasted 6. 2 cups coleslaw 7. 1 cup pickle chips 8. 1 cup sweet BBQ onion rings

Instructions

  1. Coat pork chops with the Memphis BBQ dry rub and let them marinate for 30 minutes to 4 hours.
  2. Preheat grill or smoker to medium high heat, approximately 375°F (190°C).
  3. Add applewood chips to the grill and smoke the pork chops until the internal temperature reaches 165°F (74°C), about 20 30 minutes.
  4. Brush BBQ sauce on both sides of the cooked chops and return them to the grill for an additional 3 5 minutes, basting frequently, until heated through.
  5. Assemble burgers by placing pork chops atop toasted buns, followed by coleslaw, pickle chips, sweet BBQ onion rings, and a final drizzle of sauce.
