  3. Dredge each chicken cutlet in the following order: flour mixture, buttermilk, and panko breadcrumbs, pressing to adhere. Transfer breaded cutlets onto a parchment lined tray and let them rest for 15 minutes.
  4. In a deep skillet or heavy pot, heat about 2 inches of vegetable oil to 350°F. Fry chicken in batches until golden brown and cooked through, approximately 4 5 minutes per side. Remove from oil and drain on paper towels.
