Ingredients

  • 3 lbs tri
  • tip steak, fat trimmed 1/4 cup olive oil 2 tbsp paprika 2 tsp chili powder 1 tsp garlic powder 1 tsp onion powder 1 tsp cayenne pepper 1 tsp black pepper 1 tsp salt 1/2 cup red wine 1/4 cup honey 2 tbsp Worcestershire sauce 1 tbsp apple cider vinegar

Instructions

  1. In a small bowl, combine the paprika, chili powder, garlic powder, onion powder, cayenne pepper, black pepper, and salt. Set aside.
  2. In a large resealable plastic bag, combine the tri tip steak and olive oil. Massage the olive oil into the steak to evenly coat.
  3. Sprinkle the spice mixture evenly over the tri tip steak in the plastic bag. Seal the bag and refrigerate for at least 2 hours or overnight for maximum flavor.
  4. In a small saucepan, combine the red wine, honey, Worcestershire sauce, and apple cider vinegar. Bring to a boil, then reduce heat and simmer until the sauce thickens slightly, about 10 minutes. Remove from heat and set aside.
  5. Preheat a grill or grill pan to medium high heat. Grill the tri tip steak for 4 5 minutes per side, or until desired doneness is reached.
  6. Remove the steak from the grill and let it rest for 5 minutes. Slice the steak against the grain into thin strips and place on a platter.
  7. Drizzle the warm spicy red wine glaze over the sliced tri tip steak and serve immediately.

Chef’s Insight

For added flavor, consider marinating the tri-tip steak overnight for a more intense spice rub.

Notes

Use a meat thermometer to ensure the steak is cooked to your desired level of doneness.
