Ingredients

  • 2 lbs large shrimp, peeled and deveined
  • 1 cup all
  • purpose flour
  • 2 cups panko breadcrumbs
  • 2 large eggs
  • Vegetable oil, for frying
  • 1 cup BangBang sauce (see recipe below)

Instructions

  1. Prepare three shallow dishes: one with flour, another with beaten eggs, and the third with panko breadcrumbs.
  2. Dredge shrimp in flour, then egg, and finally coat with panko breadcrumbs, shaking off excess in each step.
  3. Heat about 1 inch of vegetable oil in a deep frying pan or skillet to 350°F (175°C).
  4. Fry shrimp in batches for 2 3 minutes per batch or until golden brown and cooked through, using a slotted spoon to turn them occasionally.
  5. Remove fried shrimp from oil and drain on paper towels.
  6. Toss the hot fried shrimp in BangBang sauce and serve immediately.

For an extra crunch, mix cornstarch with the flour before dredging the shrimp.
