Smoky Southern Corn Fritters with Spicy Honey Drizzle

In a large bowl, combine corn kernels, shredded cheese, diced jalapeno, flour, milk, beaten egg, baking powder, salt, and pepper. Mix well until all ingredients are incorporated.

Using a tablespoon or ice cream scoop, carefully drop spoonfuls of the corn mixture into the hot oil, being careful not to overcrowd the pan. Fry for 2 3 minutes per side or until golden brown and crispy.
