Instructions

  1. Prepare your grill for indirect cooking, with a temperature of around 350°F (175°C). Add the soaked hickory wood chips to create a smoky atmosphere.
  2. In a small bowl, mix together applewood smoked salt, paprika, brown sugar, chili powder, cumin, onion powder, garlic powder, ground black pepper, cayenne pepper, and smoked paprika to create a dry rub. Coat both sides of the pork loin chops with the dry rub, pressing gently to adhere.
  3. Place the pork chops directly over indirect heat on the grill and cook for 15 minutes. Flip the chops, baste them with homemade Kansas City BBQ sauce, and continue cooking for another 15 minutes or until the internal temperature reaches 145°F (63°C) when measured with a meat thermometer.
