Dairy (in cheese), Gluten (in Hawaiian rolls)

Ingredients

  • 12 Hawaiian rolls, sliced in half
  • 6 tablespoons unsalted butter, softened
  • 12 slices sharp cheddar cheese
  • 1/4 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1/2 small head cabbage, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat a grill or grill pan over medium heat.
  2. Spread softened butter on the cut sides of each Hawaiian roll half, and place them buttered side down on the preheated grill. Toast the rolls until golden brown, about 1 2 minutes per side. Remove from the grill and set aside.
  3. In a large bowl, combine mayonnaise, apple cider vinegar, sugar, salt, pepper, smoked paprika, garlic powder, and onion powder. Mix well to create a spicy coleslaw dressing.
  4. Add thinly sliced cabbage and red onion to the dressing and toss until well coated. Let it sit for 10 minutes to allow the flavors to meld.
  5. Assemble the sliders by placing a slice of cheddar cheese on the bottom half of each roll, followed by a generous spoonful of spicy coleslaw. Top with the other half of the roll.
  6. Return the assembled sliders to the grill and cook for an additional 2 3 minutes until the cheese is melted and the rolls are warm and crispy. Serve immediately.

Chef’s Insight

For an extra smoky flavor, add a few drops of liquid smoke to the spicy coleslaw dressing.
