  • 4 ears of fresh corn, husked and cleaned
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1 cup shredded Cotija cheese
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Heat a grill or grill pan over medium heat.
  2. In a small bowl, combine sour cream and mayonnaise until well mixed set aside.
  3. In another small bowl, mix together cumin, chili powder, paprika, garlic powder, salt, and pepper set aside.
  4. Brush the corn with water or oil and place on grill. Cook for 6 8 minutes, turning occasionally until the corn is tender and slightly charred.
  5. Remove corn from grill and let it cool slightly.
  6. Spread sour cream mixture evenly over each ear of corn. Then, sprinkle the spice mixture generously on each ear.
  7. Top each ear with shredded Cotija cheese and a generous handful of fresh cilantro.
  8. Serve immediately with lime wedges for a tangy, zesty finish.
