Instructions

  3. Grill the corn on all sides until slightly charred and tender, about 8 10 minutes. Rotate the corn every 2 minutes for even cooking.
  4. In a small bowl, mix together mayonnaise, cotija cheese, chili powder, cumin, lime zest, and salt to taste. Set aside.
  5. Remove the corn from the grill and let it cool slightly. Spread a generous layer of the spiced mayo mixture on each ear of corn.
  6. Sprinkle the corn with additional cotija cheese and lime juice. Garnish with cilantro leaves.
