Ingredients

  • 1 lb beef flank steak
  • 2 bell peppers (red and green)
  • 1 large onion
  • 8 oz button mushrooms

  • 3 tbsp fajita seasoning
  • 1 lime
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 can black beans, drained and rinsed

Instructions

  1. In a large bowl, marinate the steak with 2 tbsp olive oil, fajita seasoning, juice of 1 lime, salt, and pepper for at least 30 minutes.

  3. Preheat a grill or grill pan to medium high heat. Grill the marinated steak for 5 6 minutes per side or until desired doneness. Remove from grill and let rest for 5 minutes before slicing.
  4. In the same grill, cook the bell peppers, onion, and mushrooms in 1 tbsp olive oil for 3 4 minutes or until tender.
  5. Assemble each fajita bowl with cooked rice, black beans, steak, grilled vegetables, shredded cheese, and avocado slices.
