Ingredients
1 lb pork shoulder, cut into 1
inch cubes
2 cups hickory wood chips, soaked in water for at least 30 minutes
2 cups Carolina BBQ sauce (ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, liquid smoke, salt, pepper, and paprika)
1 lb smoked sausage links
4 hamburger buns, split and toasted
1 cup coleslaw, prepared or homemade
1 cup baked beans, prepared or homemade
Pickles, for serving
Instructions
Preheat your grill or smoker to medium heat (around 350°F). Soak hickory wood chips in water for at least 30 minutes before use. Drain and set aside.
In a large bowl, mix all ingredients for the Carolina BBQ sauce. Reserve 1 cup for serving and brush remaining sauce onto pork cubes and sausage links.
Place soaked hickory wood chips directly on hot coals or in your smoker's smoke box, ensuring an even distribution of heat and smoke.
Grill the pork cubes until they reach an internal temperature of 195°F, approximately 20 25 minutes. Grill sausage links until they are cooked through and have a nice char, about 8 10 minutes. Brush with additional sauce as needed during cooking.
Assemble the Snack Platter: Toast buns on the grill, then layer coleslaw, pork cubes, more Carolina BBQ sauce, sausage links, and finally a scoop of baked beans. Add pickles to taste.
Serve immediately with extra napkins and enjoy!
