  • 4 ears of corn, shucked and cleaned
  • 2 tablespoons olive oil
  • 1 cup BBQ sauce (preferably your favorite brand)

  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Preheat grill or grill pan to medium heat. Brush corn with olive oil and season with salt and pepper.
  2. Grill corn for 6 8 minutes, turning occasionally, until slightly charred and tender. Remove from heat and let cool slightly.
  3. In a small bowl, mix together BBQ sauce, mayonnaise, smoked paprika, chili powder, cumin, garlic powder, onion powder, and cayenne pepper (if using). Stir until well combined.
  4. Using a pastry brush or the back of a spoon, generously slather the BBQ mixture over each ear of corn.
  5. Top each ear of corn with crumbled blue cheese and fresh cilantro.
  6. Squeeze lime wedges over the top for added zest. Serve immediately and enjoy!
