Smoky Spice-Rubbed BBQ Brisket Bites

Ingredients

• 2 lbs beef brisket, cut into 1
• inch cubes
• 2 tbsp paprika
• 2 tbsp brown sugar
• 2 tsp garlic powder
• 2 tsp onion powder
• 2 tsp ground cumin
• 2 tsp chili powder
• 1 tsp smoked paprika
• 1 tsp black pepper
• 1 tsp kosher salt
• 1/2 tsp cayenne pepper (optional)
• 1/4 cup apple cider vinegar
• 1 cup barbecue sauce of your choice

Instructions

1. In a small bowl, mix together the paprika, brown sugar, garlic powder, onion powder, ground cumin, chili powder, smoked paprika, black pepper, kosher salt, and cayenne pepper (if using) to create a spice rub.
2. Coat each brisket cube in the spice rub, making sure they are evenly covered.
3. Preheat your grill or stovetop griddle to medium high heat.
4. Place the seasoned brisket cubes on the grill or griddle and cook for 3 4 minutes per side, until browned and slightly charred.
5. In a separate saucepan, mix together the apple cider vinegar and barbecue sauce. Bring to a simmer and let it reduce slightly, about 5 minutes.
6. Once the brisket bites are cooked, transfer them to a large bowl and pour the reduced barbecue sauce over them. Toss to coat evenly.
7. Serve immediately with napkins or toothpicks for picking up the succulent brisket bites.
